Cooking, for me, is a daily practice of mindfulness — a way of staying close to the product, the season, and the people I cook for.

I draw inspiration from Polish cuisine, which I treat as a starting point for further exploration. I combine it with experiences and influences from different places, while preserving simplicity and respect for natural flavour.

Authenticity is what matters most. I am drawn to what is simple and true — quality of the ingredient, precision, and harmony. The rest is unnecessary.
